What is the difference between the different resolutions?

Currently there are different resolutions ranging from 1920 x 1080 Full HD, up to 320 x 240 QVGA (there are actually many more but here's are the most commercial). The first digit indicates the number of horizontal lines, and the second the number of vertical lines. The more lines you have the better the sharpness with which you see the recorded images.

Regarding the photo mode of the different spy cameras the same thing happens. The more pixels there are, the better the image quality. With high resolutions we will be able to use the zoom without that we lose sharpness. When we do this with lower resolutions, the photo we will look blurry or “pixelated”. Here we see an example of a “zoom” with different resolutions.
